Fooooood!!

One of the things we’ve looked forward to in retirement is cooking more. We’ve been on a quest for the last couple of months now to eat healthier altogether. That means buying organic and non-GMO when possible, although it’s significantly more expensive. That can be a challenge but we’re trying. Our health is worth it right? RIGHT! 

One thing I LOVE to make is soup. I’ve made many now and learned how to make it tasty without having to cook it for hours, which is a big plus. Most have turned out really good, including:

CHICKEN & VEGGIE

and . . . BUTTERNUT SQUASH & SWEET POTATO

We’ve also been making our own pizza, using cauliflower crust when possible. Talk about yummy! Here’s our GREEN CHILI CHICKEN. Not the best looking pizza but it turned out delicious!

And our SAUSAGE & VEGGIE SUPREME! Also very yummy!

When my step-daughter, Jamie, was visiting recently she taught me how to make Veggie Pancakes. OMGosh, these are so great! You can use any veggies you want and it’s a great way to finish off veggies that are past their prime so you don’t have to throw them out. I’ve made these a few times now using different veggie combinations and they’ve all turned out yummy. We just add a little maple syrup and voila’! Much healthier than traditional pancakes.

VEGGIE PANCAKES

Another thing I’ve been doing to add nutrition to our diet is making fresh sprouts. I started with lentils which are great. I tried black-eyed peas and chickpeas but didn’t care for those. So I’ve continued with the lentils. They taste great (in my opinion) and they have a great crunchy texture. I put them in the veggie pancakes, scrambles, on sandwiches, in soup and salads and I even eat them just by themselves!

LOL. I know . . . weird pic but at least I’m eating my sprouts right?? Which reminds me. Time to start a new batch. So, with that, here’s to our health!!
